Chocolate & Red Berries Engagement Cake — The Recipe That Stole the Show

Some cakes are made to be eaten. This one was made to be remembered. When I was asked to create an engagement cake for a very special couple, I knew right away that I wanted something deeply indulgent but still beautiful — and this chocolate and red berries cake hit every single note perfectly. Rich, dark, romantic, and just a little bit dramatic. Exactly what an engagement deserves!

The base is a classic dark chocolate sponge — moist, dense, and full of flavor. I fill it with a whipped dark chocolate ganache and a homemade raspberry compote that adds just the right amount of tartness to balance the sweetness. The outside gets a smooth coat of chocolate buttercream, and then comes the fun part: piling on those gorgeous red berries until the top looks almost too pretty to cut into. Almost.

INGREDIENTS:

  1. 250g unsalted butter, softened
  2. 250g dark brown sugar
  3. 4 large eggs
  4. 200g self-raising flour
  5. 50g good quality cocoa powder
  6. 1 tsp baking powder
  7. 100ml whole milk
  8. 150g dark chocolate (70%), melted
  9. 200ml double cream (for ganache)
  10. 3 tbsp raspberry jam or fresh compote (for filling)
  11. 300g fresh strawberries, raspberries, and blueberries (for topping)
  12. Powdered sugar and mint sprigs to garnish

Once it all comes together and those berries are piled on top, you'll have a cake that looks like it belongs on the cover of a magazine — and tastes even better. Every time I make this one, it gets the same reaction: wide eyes, a sharp intake of breath, and then pure silence while everyone takes that first bite. That silence is my favorite sound in the whole world.

Elegant Birthday Cake Design

Summertime may be long gone, but that won't stop us to enjoy eating a delicious peace of cake in this cold autumn season.

This elegant ribbon cake design is probably one of the easiest ways you can decorate your cake. And it certainly doesn't require any craftsmanship skills in order for you to decorate a similar cake design like this particular one. All you have to do after covering the cake with fondant, is to make another layer of fondant, with any color you would like, on a flat surface. After you've all done those steps, get yourself a cutting tool, (knife, pizza cutter, etc.) and cut the ribbons in any shape or form you would feel like so it would fit your idea of decorating your cake. Finally. grab those ribbons you've just cut, and place it in a way you like on the cake.

  8. 2 teaspoons instant coffee powder
  9. 1/3 cup (80ml) boiling water

Note:

Make sure you preheat the oven to 180'C, use an electric mixer to beat the butter and sugar, than add the eggs one at a time, beating well between each egg you put in a big bowl. Next, take the mentioned ingredients such as  plain flower, flour, soda and milk put them on a separate bowl and stir until those ingredients are combined. Finally, you bake the cake in preheated oven for 1 hour or when you see that the cake has baked enough it doesn't have exactly 1 hour. When you take the cake out of the oven make sure you set aside for 5 minutes.
This is a short description of a chocolate cake, if you want a fully detailed description fell free to ask. Hope you liked it. Take care!
